As much as I’d love to say things slow down after the holidays, often, that’s just not the case. In January, routines start up again, kids go back to school, parents go back to work, and life feels just as busy as the month before.
Busy or not, though, we all still need to eat. Whenever I can find healthier meal ideas, made with organic ingredient options, I’m all in.
For the month of January, Target is offering Lean Cuisine products for only $1.99 (regularly $3.00). Naturally, I had to take advantage of this great stock-up sale! Lean Cuisine offers products that are non-GMO, gluten-free, high in protein, and made with organic ingredient options.
I’ll often eat a Lean Cuisine for a quick lunch (or even dinner), and I’m always on the lookout for easy side dishes to pair with my meal. Picking up a LEAN CUISINE® Marketplace Vermont White Cheddar Mac & Cheese, I decided to make an easy (think 5-minute-prep!) roasted carrot recipe that’s a great addition to the creamy Mac & Cheese.
Just gather your ingredients, toss with your carrots, and roast!

These turned out so, so good. Roasted vegetables are a go-to in our household, and, naturally, I love how easy and fast this recipe was to put together!
