Gazpacho is one of my favorite summertime dishes.
It’s easy to make, healthy and delicious! You can also easily customize the recipe based on your personal preferences and what you have in the fridge!
Do You Need to Peel Tomatoes for Gazpacho?
Some people recommend peeling tomatoes for gazpacho.
Personally, I think it’s an unnecessary step.
If you’d like to peel your tomatoes, though, for a smoother consistency, it’s not hard at all. Cut a small x at the base of each tomato with a paring knife. Then, add your tomatoes to a pot of boiling water for 30 seconds.
Remove tomatoes to an ice bath. Once cool, the tomato skins should easily peel off. Then, you can gently squeeze your tomatoes over a bowl to remove the seeds.
How to Make Gazpacho
Easy Blender Gazpacho
A healthy and easy vegetarian gazpacho recipe perfect for summer entertaining!
Ingredients
- 6 Roma Tomatoes, diced and seeded
- 1 cup Red Onion, diced
- 1/2 Seedless Cucumber, peeled and diced
- 1 Red Bell Pepper, seeded and diced
- 2 cloves Garlic, minced
- 2 cups Tomato Juice
- 1 tablespoon Worcestershire sauce
- 5 drops Hot Sauce
- 3 teaspoons Vinegar (Apple Cider, Red Wine or White are best, but any will do)
- 1/4 cup Extra Virgin Olive Oil
- Salt and Pepper to taste
Instructions
- Add all ingredients to your blender.
- Blend until you reach desired consistency (I prefer mine slightly chunky).
- Refrigerate for at least 30 minutes.
- Top with extra, diced veggies for garnish, if desired.
