Of all the many, many pins I save on Pinterest, my favorite pins tend to revolve around food. Maybe you’re the same?
Wanting to try my hand at a light, not-overly-sweet cookie, I came up with these lemon tea cookies! The base is similar to a shortbread, and the lemon icing adds the perfect amount of sweetness.
It’s hard to put into words how perfect these cookies are. They’re light and flavorful, without being too sweet. Being slice-and-bake cookies, they’re also incredible simple to make.

Placed in clear baggies and cinched with washi tape twist ties, these cookies would make a great gift or favor idea.
Lemon Tea Cookies
An easy, delicious, lightly sweet lemon cookie. It's the perfect accompaniment to a cup of tea.
Ingredients
- FOR THE COOKIES
- ¾ cup unsalted butter
- 1 teaspoon lemon zest
- 1 tablespoon lemon juice
- 1 ¼ cup flour
- ½ cup cornstarch
- 1/3 cup confectioners’ sugar
- FOR THE GLAZE
- ¾ cup confectioners’ sugar
- ¼ cup unsalted cold butter, cut into 1/2 inch cubes
- 1 teaspoon lemon zest
- 1 tablespoon lemon juice
Instructions
To make cookies: Cream butter, lemon zest and juice until fluffy. In separate bowl, sift dry ingredients and mix into butter on low speed.
Divide in half. Shape each half into an 8×1 inch log and roll in plastic wrap. Refrigerate for 2 hours.
Cut into ¼ inch rounds. Bake at 350 F for 12 minutes. Cool.
To make icing:
On low speed in your mixer, beat the cold butter until smooth. Slowly add confectioners’ sugar until blended. Beat in the lemon zest and juice. Add to cookies.
