Tuna has always been a go-to for my family when we’re looking for something healthy and delicious. So when I discovered StarKist Selects E.V.O.O., packed in cold-pressed extra virgin olive oil, I knew it was something we’d love!

As I understand it, tuna packed in extra virgin olive oil is very common in other countries, so, wanting to see what all the fuss is about, I used StarKist Selects E.V.O.O. Yellowfin Tuna to create an easy Avocado Tuna Salad!
Served in an avocado half, this light meal is clean, healthy and perfect for lunch or a simple dinner. Serve over fresh arugula or spring mix!
The extra virgin olive oil in StarKist Selects E.V.O.O. gives the tuna a rich flavor and tender texture. As I mentioned, tuna in olive oil is very common in many parts of the world, and I’m so glad and it’s finally becoming more mainstream in America, as well!
I used common Mediterranean ingredients to make this tuna salad, but the recipe is completely customizable. Create a traditional tuna salad if that’s your go-to, or make up your own tuna recipe using your favorite ingredients (white beans, eggs, chickpeas, bell peppers, fresh peas…anything goes)!

- 2 Pouches StarKist Selects E.V.O.O. Yellowfin Tuna
- 2 Large Avocados, Sliced in Half
- 2 Tablespoons Cup Sliced Tomato
- 2 Tablespoons Diced Cucumber
- 1 Tablespoon Diced Red Onion
- 1 Tablespoon Capers
- 1 Tablespoon Chopped Kalamata Olives
- 1 Teaspoon Parsley
- Half a Lemon
- 1/2 Cup Arugula
- Salt and Pepper to Taste
Combine tuna, tomato, cucumber, red onion, capers and olives in a bowl. Dress with the juice of half a lemon and salt and pepper to taste. Serve in avocado halves. Top with chopped parsley.
Serve over arugula, romaine or mixed greens, if desired.
