Spaghetti Squash with Farro, Caramelized Onions, Tomatoes & Balsamic

This recipe for spaghetti squash with farro, caramelized onions, tomatoes and balsamic is AMAZING! It’s a healthy and delicious recipe that works for weeknights as well as special occasions.

I made this dish after having something similar in a local restaurant. It was so, so good, and I knew it was a recipe I could recreate without too much trouble.

You take delicious, roasted spaghetti squash, and top it with farro, tomatoes, and other yummy ingredients! Keep reading for the full recipe!

There are a couple of steps to this recipe, but don’t let that intimidate you. You can easily roast the spaghetti squash ahead of time, and use it for a couple meals during the week. The caramelized onions can also be made a couple of days ahead and used for a variety of easy meals!

  1. Halve and roast your spaghetti squash.
  2. Meanwhile, caramelize your onions.
  3. Cook your farro according to package instructions.
  4. Once squash is roasted and cool, scrape out the insides using a fork.
  5. Top spaghetti squash with farro, caramelized onions, halved cherry tomatoes, and pine nuts.
  6. For serving, add Parmesan cheese, a drizzle balsamic glaze and parsley, if desired.

Notes

You can make your squash, onions, and even your farro ahead of time so this recipe will come together much quicker for a weeknight meal.

You can even skip the caramelized onion step and use french fried onions 🙂

To roast your pine nuts, heat over to 325 degrees. Place pine nuts on cookie sheet and roast for 3-5 minutes, keeping a close eye on them and stirring them halfway through.

You can definitely tweak this recipe to your taste as well. Sun-dried tomatoes and roasted red peppers would be amazing in it, and if you don’t have balsamic glaze, any sort of balsamic vinegar would work.

I used Parmesan cheese, but goat cheese would also be a delicious topping! And almost any grain could replace the farro, just use what you love!
