There are a couple of steps to this recipe, but don’t let that intimidate you. You can easily roast the spaghetti squash ahead of time, and use it for a couple meals during the week. The caramelized onions can also be made a couple of days ahead and used for a variety of easy meals!

You can make your squash, onions, and even your farro ahead of time so this recipe will come together much quicker for a weeknight meal. You can even skip the caramelized onion step and use french fried onions 🙂 To roast your pine nuts, heat over to 325 degrees. I used Parmesan cheese, but goat cheese would also be a delicious topping! And almost any grain could replace the farro, just use what you love!
