One of my very favorite parts of summertime is firing up the grill and having friends over for some al fresco dining. My husband, in particular, loves taking charge of the grill, and I love coming up with new ideas and recipes for him to try.
Knowing that we won’t have people over, though, if we over-complicate things, I’m always keeping my eyes open for easy, no-prep, meal ideas. When I discovered Smithfield® Hickory Smoked Brown Sugar Marinated Pork Chops at Food Lion the other day, I knew I wanted to try them for our next grilling adventure.
Smithfield Marinated Fresh Pork is the ideal choice for summer entertaining. It’s slow-marinated and perfectly seasoned in the bag, meaning NO prep work for you. Just open the package, and place on the grill. Their pork is is made from 100% fresh pork and has no artificial ingredients, so you can feel good feeding it to your family and friends.
While my husband was prepping the grill, I prepared an easy side dish to go with our Smithfield Hickory Smoked Brown Sugar Marinated Pork Chops–Grilled Sweet Potatoes with a Cilantro Lime Vinaigrette.
After slicing the sweet potatoes, I handed them off to my husband to add to the grill while I created the easy vinaigrette dressing…

This dressing was SO GOOD. I could eat it with a spoon and plan on using it for other grilled veggies this summer, as well!
I also roasted up some brussel sprouts and carrots, with some salt, pepper and olive oil. About 20 minutes after my husband started grilling, dinner was done!
